You may hear the argument that raw food is difficult to digest, and could be dangerous for people for this reason. When one considers how difficult it is to digest a burger, fries and soft drink, the argument almost becomes laughable -- but really, when one hears this being said, it's important to consider that one is not just eating raw, unprepared vegetables. Raw food recipes focus on preparing food in such a way that it's actually easier to digest than cooked food, with proper food combinations and absolutely incredible flavor. There's truly a difference in the available nutrition in raw and living foods. While some research indicates some nutrients are "liberated" by cooking (made available), it's well known that far more are destroyed. And in that destruction are some of the most important nutrients of all: enzymes. Because we haven't figured out a required level of these crucial molecules, they seem to be overlooked in mainstream discussions of nutrition. However, consider what they do: there is an almost uncountable number of chemical reactions going on in our bodies all the time. While these practical dietary reasons are a great inspiration themselves, many people find the potential for personal transformation the greatest inspiration of all.
