Learn how to Paint Designs on Molded Chocolate Candy

Chocolate candy decorations truly dress-up any birthday cakes or dessert. Decorations are usually made with Merckens chocolate, but might be created using just any melted, as well, determined by the recipe and size.

Soften the candy separately before inserting in parchment bags, then spoon it into bags. Using scissors, cut a small gap in tip and squeeze candy on top of molded candy. You may also reheat chocolate if it hardens inside the bag by putting the bag back in the microwave. Simply squeeze from your bag onto your molded candy.
Shavings: Choose the little grater holes of the box grater. Holding it over the iced cake, take a large piece of chocolate candy and grate. Work rapidly because your fingers are warm and will make a mess. Strive not to touch the shavings for a similar reason. It might be best to press the shavings on top of when the frosting is soft so the shavings will adhere.
Transfer Sheets: Transfer stunning edible designs on plastic film (acetate) that transfer on top of your melted chocolate candy! Melt chocolate candy and lay out on top of the transfer sheet. Either score to size you need before it sets. While set, remove pieces and adhere to "cold chocolate" with a little warm chocolate candy.
There are several little tips to follow when handling chocolate candy: You can work on a marble slab because it is mostly cold, which assists the chocolate to set. You can also work on the granite or stainless-steel countertop. Work in the cool room because chocolate will easily soften while working in the warm one. Avoid touching the chocolate using your fingertips, since they are the warmest part of your hands and can simply melt it. Remember when using any equipment and dipping apparatus, they must be moisture free; this becomes important if using a paint brush -- it must remain air dried a minimum of 48 hours after cleansing before using again.
