Baking vegetables is healthy. You can make various delectable dishes from your favorite vegetables, in place of meat and other oily food. Baked vegetable recipes can be breads, cookies, cakes or pizza. It is definitely a healthier alternative to your favorite foods.

Preparing these foods is easy. There are no special skills to it. There are many recipes you can find that are easy to follow. Some vegetables you can bake are carrots, beans, cabbage, cauliflower, potato, mushrooms, onions, eggplants and cucumber.

With the different types of diseases coming out, especially with cancer and heart problems prevalent, setting up food standards is really becoming a necessity. Lessen your meat intake and eat more vegetables.

Aside from the usual stir-frying and boiling, you can actually also bake vegetables. You can make delectable and nutritious home made baked vegetable recipes with ease.

A good tip is to let these vegetables stay inside the oven only for a few minutes for vegetables to retain its nutrients, vitamins and minerals.

You can also try the alternative to meat, which is vege-meat. It is gaining popularity these days. Another tip is to add some extenders like cheese and Tofu onto you baked vegetable dish.

Prior to cooking your vegetables, make sure you have cleaned them well. Although there are those that grow their vegetables at home, those who buy their vegetables in markets and groceries should take precautionary measures. You don’t know how the vegetable was grown and what fertilizers were used.

Baked Vegetable Casserole:
Ingredients:
• 2 lrg carrots (sliced)
• 4 pcs zucchini (sliced)
• 1 lb potatoes (sliced)
• 2 cloves of garlic (sliced thinly)
• 2 onions (should be sliced)
• 1 can of tomatoes

Or

• 2 green peppers (should be sliced)
• 1 ½ lb fresh tomatoes (should be sliced)
• ½ c olive oil
• Oregano
• Salt & pepper
• Parsley

Procedure:
Arrange all the sliced vegetables in a large casserole, in layers. Sprinkle every layer with oil, salt & pepper, oregano, tomato and parsley. Top this with the remaining oil and tomato. Cover and bake for one hour at about 350 degrees.
