A Cake Recipe Using Zucchini (Courgette) and Chocolate Ingredients Needed: One t. cinnamon One teaspoon vanilla essence 2 half a cup flour 0.5 Cup refined sugar 2 tsp bicarb of soda 1 cupful demerara sugar 1/2 cup butter three courgette, approx. six inches long, cut into thin shreds (approximately 2 c.) 0.5 Cup vegetable oil One tsp salt A half cup of buttermilk three eggs 4 T, cocoa 1/2 C. to 1 C. chocolate chips Instructions: In advance, preheat your oven to to 325 degrees F. Lightly grease a Nonstick 9" x 13" Sheet Cake Pan and put to one side. In mixing bowlmix the brown and white sugar, the butter and the oil. Add eggs, the vanilla and the buttermilk and mix well. With a sifter or sieve, sift the salt, flour, cocoa, cinnamon and baking soda until well combined and lump free. Combine the two mixtures Mix in the shredded courgette and stir well. Put everything into pan and sprinkle the choccie chips over the top. Transfer to the hot oven and cook for 45 mins. Allow to cool, remove from tin and place on a rack to cool before serving. In these demanding times, having a meal together is usually the only opportunity that we get to enjoy some quiet time with our close family.
