6 Tips on Reducing Kitchen Waste

The UK alone throws away £7.7 billion of food every year with salad, dairy products and bread topping the list of the most discarded items. This article contains quick and easy hints on how to use things that you keep in your refrigerator that you would otherwise toss in the bin.

Bread - Leavened bread is one of the most versatile food stuffs so there is no excuse for throwing it away. Find a recipe for bread and butter pudding, apple Betty or palace pudding to make a cheap and simple dessert or make breadcrumbs and use them for burgers, meatballs or even a rarebit.

Crudités - If you find yourself with carrot or cucumbers left over from a salad you can make crudités. Chop the vegetables into sticks of about three inches in length and serve them raw with a dip. And if finding a dip is a problem you can use tomato ketchup for kids and for the adults try cracking some black pepper onto mayonnaise.

Rollover meals - Rather than just waiting to see what leftovers you have, take control and plan to use leftovers from one meal as the basis for another. So if you have a roast joint on Sunday plan to cook a stew or curry on the Monday in order to use any remaining meat. This can be a really good way of controlling your portions as you avoid over indulging in order to make sure you have enough leftovers for the next day.

Salad - If you throw away half of every lettuce you buy then consider switching to spinach. Not only does spinach last longer than lettuce, contain more nutrients (especially fibre, iron and potassium) but when it does start to wilt you can cook it. Traditional uses of cooked spinach include curries, steamed like cabbage and baked into bread.

Tomatoes - No one wants to use soggy tomatoes in a salad so cook them instead. During the winter tomatoes can be used to add sweetness and colour to any number of dishes and in the summer you can make salsas or gazpacho soup. When you have no immediate use for your tomatoes one of the best things to do is to cook them up into an all purpose sauce or passata and then freeze it to use later in the year. This is especially useful when you grow your own tomatoes and cannot bear to see them wasted.

Milk - If you have too much milk and know you are going to have to tip some down the sink, whip up a quick béchamel sauce and freeze it? By mixing flour, butter and milk (all ingredients you are likely to find in your cupboard) you can make one of the most versatile ingredients in Western cuisine.

So next time you clean out your fridge freezer be sure not to throw things away so quickly - there might be something you can do to stop waste and feed your family at the same time.
